Roasted Rosemary Sweet Potatoes

I LOVE sweet potatoes. They are a great snack, salad topper, side, or meal on their own. One of my favorite ways to enjoy them is roasted. This recipe was inspired by the rosemary sweet potatoes from the hot bar at Whole Foods.


I start by prepping the potato (I used one but feel free add potatoes to fit your needs) and then cutting it length wise in half, and in half again. I then cubed each strip into half inch cubes. I recommend using a rimmed baking sheet lined with parchment paper to roast your potatoes on.


After laying out the cubed potatoes in an even layer on your baking sheet, drizzle on the avocado oil. Then add salt and pepper to taste, and toss to coat evenly. Sprinkle some rosemary on top and then pop those in the oven at 400 degrees.




You are going to want to flip them at about the halfway mark. I baked mine for about 30 minutes and flipped at 15. Depending on your oven anytime between 25-35 minutes total cook time should have them nice and roasted.
